- Prepare 175 g of Caster sugar x.
- Get 175 ml of Sunflower oil x.
- Get 3 of Eggs x.
- Provide 150 g of Courgettes x.

- Prepare 175 g of Self-raising flour x.

- Preheat oven to 160 degrees Celcius.
- Beat together the sugar, oil and eggs.
- Stir in grated courgettes (making sure you squeeze out liquid from it). Stir in crushed nuts, lime zest, flour, bs and cinnamon.
- Pour the mixture into a lined and greased loaf tin and bake for 1 hour until cooked through. Allow to cool and remove from the tin.
