The ingredients needed to cook Mini Snowballs:

  1. Take 625 ml of self-raising flour.
  2. Use 125 g of butter or margarine.
  3. You need 250 ml of castor sugar.
  4. Get 5 ml of vanilla essence.
  5. Take 125 ml of smooth apricot jam plus extra 45ml fir spreading.
  6. Provide 125 ml of water.
  7. Get 1 cup of desiccated coconut.

  3. Roll into 24 balls(I decide to make 12 giant balls this time) and place on a greased baking tray. Flatten slightly using a fork. Bake at 180 °C for 15-20 minutes. Leave to cool.
  4. Heat the jam and water together to make a syrup. Spread eahals with the extra jam and sandwich together then dunk into the warm syrup.
  5. Colour the coconut with red food colouring. Roll the snowball in the coconut and leave to cool. Enjoy!....
